Science evolves our understanding of the chemical processes of production. The internet carries facts and figures – alcohol content, places of origin, and characteristics of style – right to the tips of our eager fingers. Whiskey is appreciated for grounded facts that are, ultimately, knowable.
Subjectively
Whiskey is a feast for the senses. The sound as a cork pops away. A spectrum of light from clear, straw, amber, caramel, to a chocolate so dark, it’s almost black. The sharp aroma of alcohol enticingly swirls with hints from candied cherry, fresh green apple, oiled leather, or honeyed tobacco. A measured splash on the tongue of smooth creamed vanilla, 0r hot buttered bread, acrid smoke, iodine or even sea air. White pepper spice slashing down to a dusty, astringent finish redolent with strong tea. Warmth spreading from the back of the tongue, down the throat and to fill the chest and surround the heart. Whiskey is a riot to the senses appreciated for the boundless ‘scape it paints for curiosity and exploration.

Whiskey is ultimately a human creation. The human mind has the dexterity to interpret cold facts, and logical figures, in the context of boundless energy, creativity, emotion, and imagination.
